Traditionally Reared Rare beed Gloucester old Spot Bacon from our Pedigree Herd
Gloucester Old Spots, as well as producing excellent old fashioned pork, they also produce wonderful bacon and gammons. Our curing and smoking is done by H Stokes in Great Dunmow, who uses traditional methods to cure and smoke all our bacon and gammons for us.
Hogget Lamb
We will have our first Hogget available in March 2010, but we are taking orders now as there is a very limited supply. The price per Hogget will be around £120 depending on weight, and will be cut and butchered as required.
Our research has shown us that the taste of Hogget is far superior to Lamb as the flavour has time to be developed whilst at the same time it does not need extra cooking and can be served pink. With the orders we have received so far, we are obviously not the only ones with that opinion.
Free Range Chickens & Eggs
Twice a year we buy some day-old chicks to produce for table birds. Whilst we originally purchased some Ross Cobs which mature very quickly we soon realised that this breed was not for us as the chickens were very reluctant to move around their pen and to us they did not seem to enjoy life. Our next purchase were completely different, and some times it can be quite a challenge to catch them. They produce a wonderful tasting meat which again is unlike anything that you can buy in the supermarket.
Our other flock, which is kept for egg laying consists of a few black rocks, a couple of Light Sussex, a couple of Lavenders and a cuckoo.
We also have 14 ducks which we are hoping to produce some eggs in the near future.
Both the chickens and the ducks have a large fenced in area to roam around in (they have to be fenced in due to the local fox problem) and they also have a pond. As well as the GM Free feed they are also given corn and vegetables which we grow ourselves.
if you have a particular request or order, this is not a problem as long as we know well in advance so that we can let our butcher know. Please let us have 24 hours notice of your order and we can either arrange a time for collection from the farm (bring the family to see the animals) or we can deliver locally.
